Aquamacs. It even uses the same key bindings as regular Mac software (it obeys the Apple Human Interface Guidelines to a tee, at least in that area) and, as a Cocoa patch on GNU emacs, it's pretty powerful. I'm sure there's also some equivalent for Vi/Vim out there as well.

Since you seem to be working on OS X (from your comments about Interface Builder and Quartz Composer), have you tried GameSalad Creator? That the closest thing I've ever seen to "visual programming" (and no, VB/VCpp don't count).
