Of course there is always the fact that the modern western diet trains us to place high value on sweetness. Older generations probably found the Red Delicious perfectly tasty, otherwise they wouldn't have named it so. It is not the breed's fault that our palates have changed.

I've been physically exposed to the culture in Utah, Washington, New Hampshire, and Massachusetts. Also Montreal Canada, but everyone spoke French so I didn't catch much of the culture.

The Interwebodome has exposed me to many more, though in filtered slices.

I believe many/most native american tribes used the brains of the animal to preserve and tan it. I seem to remember softening involved chewing the leather. I don't think keeping the fur was much of a problem if the hide was stretched and cleaned quickly enough, though obviously chewing would be out ...
