AAC and H.264 aren't Apple's codecs. Vorbis may be similar in quality level to AAC (I don't know for sure), but Theora is most definitely not of comparable quality at the same size. There's a reason Google doesn't use Theora for YouTube. How about dirac? That's a high quality open source video code...
