Re: Today I Made:

Last night my friend (who also eats low carb) came for dinner. I made pesto-baked chicken portions, buttered baby corn, lemon-butter asparagus and roasted baby potatoes for the carb eaters. Dessert was a sort of tiramisu/trifle hybrid - I moistened some low carb chocolate cake in individual bowls wi...

Re: Today I Made:

Made Eisbein last night for dinner with my parents with mashed potato and (store bought) sauerkraut and pickled red cabbage. I thought the (smoked) hocks were a bit salty and I would've liked the skin much crispier, but the reviews were good and there was hardly any food left - and there was a LOT o...

Re: Low carb cooking

This morning I made:

Bulletproof mochaccino.

1 cup coffee, 1 tsp cocoa powder, 1/2 tsp xylitol, 2 tsp butter, 2 tsp coconut oil; blitzed in the liquidizer.

It was so good.

Re: Low carb cooking

Last night I made:

Fish (hake) and eggplant (/aubergine/brinjal) slices, both crumbed in egg and a mix of pulsed pork rinds and grated parmesan and pan fried in coconut oil. Served with a store-bought spicy low carb tomato sauce that worked super well with the eggplant.

It was yummy.

Tried to make these brownie bowls on Saturday; they turned out as these flat round brownie disks but at least they were still delicious.

Made some Sprite scones today; weirdly and unrelatedly they were also flat and still delicious.

Re: Today I Made:

I made my usual 24-cupcake recipe but multiplied 2.5 times, in 2 batches; then baked 3 batches of 30 using 2x12 pan and 1x6 pan at a time, and one last batch of 24 (but we also ate some before the market and I left some at home for the next day; I took exactly 100 with me). I used about 3kg of icing...

Friday night I made: 100 cupcakes and tens of pouches of buttercream icing for a neighbourhood market on Saturday. I iced the cupcake on the spot with the kids' choice of icing and then they could go mad with toppers and sprinkles. It was fun.

It's kind of like cream cheese except more creamy and slightly less firm, a bit more like double cream (but not as runny). It's super smooth and yum.

Green is what you should be eating every day to stay low carb (I think the lists assume <50g carbs per day), orange is allowable on occ...
