I've made these muffins for a lady who was both diabetic and had Coeliacs disease, and they were a complete success for her (and also really really yummy.) That site has excellent sections for both low-carb and diabetic-friendly, so it's a good place to skim for ideas.

Vinegar and bicarb will clean almost anything. I would put some bicarb on a damp sponge and scrub at it, then rinse it off with some white vinegar.

Swimming lessons occurred from very early primary school onwards for us, all the way up to mid high school. We would just get a bus to the local pool in primary, or walk down in high school.
