A Word for a specific Culinary Experience

A Word for a specific Culinary Experience

I'm currently travelling, and trying to write a long missive back home describing my experiences to date.

There was a word that I came across a little while ago, very arbitrarily, that describes the experience of eating food that you can't identify by look, name or taste; you're eating something and you have no idea what it is. The word describes that experience precisely.

I don't think the word was of English origin, but I don't care. Does anyone here know what that word is? I'd really like to include it in my letter.
