Leftovers ideas?

I have a bowl of pizza sauce in my fridge:

Tomato sauce made from canned tomato paste, garlic, fresh oregano, some chopped shallots, a handful of Italian sausage, and a little shitake mushroom.

Any ideas on how I should use this stuff?

Heat it in a pan, crack some eggs into it, and eat with some crusty bread or pita.

That... sounds awesome. Can you expand on this?

Scramble the egg beforehand? Kinda stir the fresh-cracked egg around? Just let it rest on top?

Recommended egg:sauce ratio?

There isn't really a wrong way to combine eggs and tomatoes. I usually crack the eggs into gently simmering tomato sauce, cover, and cook till the whites are set, like shakshouka. It's a shortcut version of an Indian dish that uses hard boiled eggs. There's also a Chinese dish that scrambles the eggs and tomatoes together in a hot wok. The ratios are quite flexible; I usually go with roughly equal volumes of tomato and egg. But really, it's however much leftover tomato sauce you have with however many eggs you feel like eating. And, of course, some cilantro and/or green chillies and/or black pepper would be nice on top.

I made a batch of this over the weekend. Served over toasted french bread.

5 stars, would eat again.
