Raw-edible fruits/veggies (for the lazy healthy eater)

Postby Rippy » Thu Mar 03, 2011 3:04 pm UTC

I've got, like, 8 fruits/veggies that I always eat, and because I'm scared of things that are different I rarely buy anything else.

So I ask you: what raw fruits/veggies do you enjoy eating? I want to find new things to start stocking my fridge with.

What I usually eat:

Fruits:
- apples
- bananas
- raspberries
- blueberries

Veggies:
- carrots
- celery

So far my ideas are green beans, red/green peppers, and peaches/apricots.

I eat all my fruit raw. As for veggies, cucumbers, tomatoes, mushrooms, onions (in salad), kohlrabi, bell peppers, beets, radishes...

Don't forget Broccoli! It is like you are a giant eating trees.

Or sprouts too. But that's like eating grass and not nearly as cool.

Veggies that are tasty raw: Broccoli (I even like the stem sliced in thin slices, like chips), carrots, sliced bell peppers, peas (both sugar snap and snow peas), and bean sprouts. Also jicama (is it a fruit or vegetable?)...I don't particularly like it, but some do and cucumbers (with white bean hummus!).

Fruits that are tasty raw: Pretty much everything I can think of. Except quinces. Those need to be cooked. I eat a lot of apples, grapes, pears, oranges, strawberries, bananas. If they weren't expensive I'd eat a lot of raspberries, blueberries, and pomegranates. Pineapple is one of my favorites, but it's a little more labor intensive to pack in a lunch, for instance. When there are nice ripe ones available, I love stone fruits like peaches, apricots, plums, etc.

Mango and pawpaw (papaya) are also tasty tropical fruit, but need a bit of preparation to remove seeds and skin, guava is excellent and tropical. Plums and pears are excellent and readily available most of the time. If you want a bit of variety with just what you have listed, try some different varieties, especially the heritage ones (e.g. for apples: cox's orange, pippins, red delicious...). Try plantain for a really excellent alternative to banana. They are very similar when ripe, but a little more sour in taste, and can be cooked like a starch when unripe.

The botanist in me is going: cucumbers (fruit), tomatoes (fruit), mushrooms (fungus - not vegetable), onions (in salad), kohlrabi, bell peppers (fruit), beets, radishes...

Cucumbers are fruits in the scientific sense, but they tend to be eaten like vegetables.

Intelligence is knowing a tomato is a fruit, wisdom is not putting it in a fruit salad.

Chilies are also a fruit, and can be used as such. Try a little habanero in your mango salad or some chipotle in your raspberry.

Just about any vegetable can be eaten raw. Cassava should not be- it's poisonous until cooked.
Cabbage shredded into slaw.
In fact, many things can be shredded on a box grater or in a food processor and be made into slaw-carrots, beets, broccoli stems, cabbages, Brussels sprouts....
There is a whole movement devoted to raw foods, mostly plants-they do complicated things to their foods, byt they sure aren't cooked!
Corn and peas are nice too. Get frozen and you can have a crunchy chilly snack.
Sugar snap peas-the rounder version of snow peas-are nice and sweet and crunchy.
There are several types of cucumber. I like the kind called "pickling cukes". They are short and bumpy and a dull green (meaning they haven't been waxed). Peel or not at your pleasure.
If your fruit isn't very sweet, make a fruit salad. Cut up different fruits and mix them together gently. Make a light syrup with a little honey and lemon juice and stir that in. Let sit for a while then enjoy.
As with cucumbers, there are apples and then there are apples. Over 3,000 varieties of apple have been recorded, and there are farms that sell literally hundreds of types. Try different apples.
Once it's warm out, go to a farmer's market and ask for tastes of stuff. The growers are usually happy to spread the love.

I'm not a huge raw-food fan, but man...I can eat some raw sugar snap peas. Mom always grows them in her garden, and the rate of attrition between me and the birds is about equal.

I love dried apricots and prunes. They count as raw, right?

Man, prunes get such a bad rap. They are fantastic.

Radishes are great, and someone gave me a clue to eat them with lime juice, a little salt, and a little hot sauce - even better!

Figure out how to cut up a whole pineapple, and then you can have chunks of pineapple in your fridge all week. It's not that tough, just remember to take the top and bottom off first, then cut into 4 or more radial sections, then cut the outer skin and the very inside tough part off each section.

I hate plums, but I absolutely love prunes.
