I've recently come to the idea that cooking (for yourself/your family) isn't about following recipes or making something completely new. It's being able to use what you have and the ideas you get from the recipe to make whatever is most convenient, appealing and nutritious.
But don't you get what you have by buying specific ingredients for recipes in the first place?
Anyways, after some brief online research I came to the thought that Lima Beans are probably the best Fava bean substitute from my current array of bean selection, so I set out for that Ful Medames things from previous. I made a smallish batch -- 8 oz dry lima beans and 2 oz kidney beans. Cooked em for a bit with onion/garlic, smashed em up good once they were soft (scooping out some wholes beforehand, which re-entered the fold), threw in some lemon juice, olive oil, and parsley, and then boiled off a little excess water. The taste is surprising light thanks to the lemon, but the appearance is appalling and I have no clue at how its supposed to taste, but I like whatever I just made all the same.
