Acorn (and other) Squash

Does anyone out there have any awesome things you can do with acorn squash? My experiments have left something wanting...mixing it with rice requires a lot of rice, or else it has the consistency of too much cheese melted into the rice. Rum didn't work as well as I expected, and pinot noir and butter (my experiment tonight)...was a good start, but still lacked something. But I don't yet know what that is. Brown sugar and butter is boring.

It makes great soup, also risotto. But if you like baked squash, I find that curry flavors work quite well. Stuffing them with couscous, sautéed onion, mushrooms and dried apricot is tasty, but just about any mix you can think of will work. It's a good way to clean out the fridge.

...that is almost exactly what I will make next time (sans apricot...could replace them with my remaining blackberries and/or strawberries). It sounds amazing. Partially because of the sauteed onion...I would eat sauteed onion+mushroom+bell pepper ice cream.

Cut in half, scoop out the crap, place butter, honey and molasses in cavity. Roast (or microwave) to your preferred softness, basting the sides regularly with the melted goodness within.

A staple in the Southern States is squash casserole. Slice up the squash, saute in butter or vegetable oil until tender, drain off excess liquid from the squash, saute a chopped onion in the butter or oil, then mix with squash in casserole dish. Top with cracker crumbs or breadcrumbs. Bake at 350 degrees for 25 to 30 minutes.

You would usually use yellow squash for that, but I imagine you could try it with acorn squash.

I found another recipe for stuffed acorn squash, that calls for ground pork, breakfast meat (ground sausage would be good for both of these), breadcrumbs, and sage.
